Sixty buck?! Chuck
- Smoke at 250-275 for about 4-5 hours.
- Target temp range 145 to 150.
- Then wrap in foil three times. Then cook at 225 for another 3 to 4 hours. Target temp is 205 to 210.
- Unwrap, see if it's fork tender, save the juices, then put back in the dry oven to set the bark. 30 minutes, 250.
